blueberry &cream-cheese muffins

blueberry & cream cheese muffins
(makes 12 deliciously comforting muffins.)
ingredients
7tbs butter//3 tbs vegetable oil// 1 cup greek yogurt//2 tsp vanilla//3 eggs//3.4 cups flour//1tbs baking powder//1/4 tsp salt //1 cup sugar//6 oz blueberries//4 oz cream cheese
1- Melt the butter in a medium pan and whilst you wait, line a 12-cup muffin pan with muffin wrappers. Preheat the oven to 400*
2- whisk the oil, yogurt, vanilla, and eggs into the pan with the butter which should now be melted and removed from heat.
3- sift the flour and baking powder into a large mixing bowl as well s the salt &sugar. Make a well in the middle.
4-pour the yogurt mixture into the well in the dry bowl. Fold over the dry ingredient using a rubber spatula. When you are able to see the large ribbons of flour; stop. Dump in the blueberries and gently mix them into the batter which will now look slightly uneven, pretty lumpy, and very thick.
5- using half of the batter fill each muffin cup evenly, and then take 1/2 tsp of the cream cheese on top of each half-filled muffin cup. Using the rest of the batter, evenly fill the rest of the muffins on top of the cream cheese. Again, using the rest of the cream cheese, place 1/2 tsp more cream cheese on top. (note that the muffin pans will look very full.)
6- Pop the muffin pan into the oven for 18-20 minutes and when a toothpick comes out crean, or the top looks slightly browned and blueberries are oozing, they'll be ready.
serve warm with a hot shot of espresso.
